Picnic-Friendly Quinoa Salad Recipe

What better way to celebrate the great outdoors than a picnic! While we do love a BBQ, there’s something so simple and delightful about a good old fashioned picnic lunch. Leave the grill and cooking supplies at home, with this healthy and portable quinoa salad recipe! With kale and quinoa for protein, carbs and fiber, plus nuts and extra virgin olive oil for healthy fats, this salad includes everything you need for a satisfying picnic-friendly meal!

Blueberry Quinoa Salad Recipe

Quinoa Salad Ingredients

  • 1 cup uncooked quinoa  (rinsed and strained)
  • 2 cups of water
  • 1 large bunch of kale, chopped
  • 1 red apple chopped
  • 1 pint of blueberries
  • ¾ cup chopped nuts (walnuts, almonds or hazelnuts)

Apple Cider Vinaigrette Ingredients

  • ⅓ cup extra virgin olive oil
  • ⅓ cup apple cider vinegar
  • 2 tbsp of honey  (or agave or maple syrup for vegan options)
  • 1 garlic clove, minced
  • ¼ tsp of salt
  • ¼ tsp of black pepper

Directions

  • Combine rinsed quinoa and water in a saucepan and bring to a boil. Salt the water (optional). Cover, reduce heat to low and simmer for 15 minutes or until all water is absorbed. Remove from heat, uncover and allow to cool.
  • As quinoa cools, chop up the kale and apple. In a large bowl, combine with the blueberries and nuts.
  • Prepare the vinaigrette dressing in a small bowl. Combine the olive oil, apple cider vinegar and honey. Mince and add in one clove of garlic, plus salt and pepper. Stir well to combine.
Picnic-Friendly Quinoa Salad Recipe
  • Once quinoa has reached room temperature, mix it into the large bowl with the rest of the quinoa salad ingredients. If you’re taking this salad to-go, pour it into a large tupperware container. Pour the dressing into a small tupperware and pour over top when ready to serve.
