    1. Prepare the pomegranates and clementines - Using a sharp knife, cut the pomegranate in half down the crown and in half again. Place one or two pieces at a time in a colander in the sink. Use your hands to break up the segments and release the seeds. Rinse with water as you do, to help remove the white pith. Pour the clean seeds into a separate bowl and continue for all 4-5 pomegranates. Peel the clementines.

    2. Combine the pomegranate seeds, clementines and the mint leaves into a high powered blender and mix into a smoothie-like consistency. Using a nut milk bag or fine sieve, filter the liquid and discard the pulp.

    3. Garnish the glasses - Measure out the coconut or brown sugar and place it in a small bowl or plate. Cut the orange in half and then cut a small complete circular slice. Place the orange on a small plate and press the edge of the glass into the orange to lightly cover with juice. Then dip the glass in the sugar to decorate the rim.

    4. Pour approx. ½ cup of the juice mixture into each champagne flute. Top with a splash of tonic water or sparkling water (depending on desired level of sweetness). Garnish with extra pomegranate seeds, mint and / or orange slices.

    Enjoy!
