Traditionally made with fresh yogurt and cold water, this vegan lassi opts for plant-based yogurt and coconut water for an extra boost of electrolytes. The addition of frozen mango, banana and kale provides energizing natural sugars, carbs and fiber while turmeric and cinnamon add rich flavor and a range of health benefits.     What are the benefits of turmeric?

    Turmeric (or curcuma) is a staple spice in Ayurvedic cooking and medicine. It can be taken as a dietary supplement or included in a variety of recipes like smoothies, curries and baked goods. The healing benefits of this powerful root include anti-inflammatory properties that can promote optimal functioning of many systems in the body including the circulatory system, the liver and the immune system.

    Vegan Kale Turmeric Mango Lassi Ingredients

    • ½ cup vegan yogurt (coconut, soy or oat)

    • 2 cups frozen kale

    • 1 cup frozen mango chunks

    • 1 small frozen banana (sliced)

    • 1 medjool date (pitted)

    • ½ cup coconut water

    • ¼ tsp turmeric

    • ⅛ tsp cinnamon

    • 1 pinch of black pepper

    Cleaning tip when using fresh turmeric: Practice mindfulness when using turmeric in the kitchen, as it’s quick to stain white surfaces. If you happen to spill some while prepping your lassi, make a baking soda and water paste to quickly remove it. Simply pour one tbsp of baking soda in a glass and add a small amount of water, stir with a spoon until a paste forms, add more water as needed. Dip a wet cloth in the paste and wipe it along the counter or cupboards to remove the stain.
